Week One Wrap Up
This is day 7! And it's the day after the Superbowl, where I know there are usually many tempting treats. How's everybody feeling??? Hopefully your "detox" symptoms have subsided...if not, don't fret. They will soon, and then you're not going to know what to do with all that amazing energy!
Today was kind of a rough day for me. Work is my major life stress, and when I don't have my entire staff there, then I have to cover for them and inevitably miss the ability to make it to the box - which totally sucks! This picture reminds me to keep the work/life balance in check:

Crab Cakes with Herb Aioli
Oh this creation is one of my favorites! It's super easy because I used wild caught, canned crab. I LOOOOOOOVE me some seafood, and crab cakes are one of my favorite things EVER!

Previously I bought a crapload of King Crab legs, steamed them, and then spent fo'eva cracking them and pulling the meat. I saw the canned crab at the store and decided I would try it out and see how it fared. I had the crave for crab cakes last night, so I decided to get krunked up. The saved time in the kitchen was HUGE, and the cakes were friggin' DELICIOUS!
So here's how I rolled:
2 TBS coconut oil
4 green onions, chopped (I used all of the light part too)
16 oz. canned crab, drained
1 egg
2 TBS mayonnaise
1 tsp dry mustard
1/4 C ground almonds (you can also use almond flour...Trader Joes sells raw, unblanched)
1/2 tsp cayenne pepper
1 & 1/2 tsp garlic powder
1/4 tsp Old Bay Seasoning
salt & pepper to taste
ground black pepper to taste
1/2 C ground almonds or almond flour
Enough coconut oil to fry the cakes
Heat oil in a skillet over high heat. Saute green onions briefly until tender and then cool slightly.
Combine crabmeat, sauteed green onions, egg, mayonnaise, dry mustard, 1/4 C ground almonds, cayenne pepper, garlic powder, Old Bay seasoning, salt and pepper.
Form into 1/2 inch thick patties & coat the patties with remaining ground almonds.
Heat coconut oil in a skillet over medium high heat. Cook cakes 8-10 mins each side. Drain briefly on paper towels and serve with the creamy, garlicy deliciousness below. =)

1.5 tsp dried parsley
2 tsp fresh lemon juice
1 garlic clove, minced
Mix everything up, and use for your cakes...Y-U-M!!!

Build Your World
Today, I won’t use my words against anyone else. Or my hands. I will work only to build my dream.
Today, I will grip the steel and I will keep it close to my body. Let no weight stray far from my center. I can’t control what is away from me.
Today, I will keep my feet firmly planted. And, at the right moment, I will jump. And land again, with the weight. I will hold it until I can hold it no more. And then I will let it fall away from me and I will be done with it.
Today, I will get stronger — in my sinew, in my head, in my heart. I will consume no food that weakens me, no words that will bring me down, no blackness to poison my soul.
My time on this earth is limited.
My actions don’t have to be.
The opportunities are as wide and as open as I want them to be.
The only limiting factor is my mind.
Only I can defeat me.
Today, I won’t let me get me.
I have moved beyond, and I now live in a world of possibilities.
It is so bright here.

Oatmeal - minus the Oatmeal
Here's a lil' sumptin' that might help with any breakfast cravings for oatmeal:
1/2 Roasted Acorn Squash, pureed (any other winter squash like Kabocha, Butternut, or Delicata would work too)
1 TBS. Almond Butter
1 tsp. Cinnamon
1-2 TBS. Ground Flax Seeds (grind whole seeds immediately before use)
1/2 tsp.
Pure Maple Syrup - the REAL stuff (if desired...the squash is usually sweet enough, after roasting, on it's own)
Squish the squash, almond butter, and cinnamon in a bowl.
Sprinkle with flax and drizzle with maple syrup (if using).
Grub.
This would make a great post-workout snack or can be eaten in the morning served with sausage or bacon and eggs.

Just wanting to check in and get a pulse on how everyone is feeling today. I hope you're all doing awesome! So I just have to tell you...
I GOT 9 FRIGGIN' HOURS OF SLEEP LAST NIGHT!!! I was between the sheets, and konked out by 9:30! Let me tell you, I woke up this morning ready to take on the world!!! MUAHAHA! Truly, the benefits of getting enough sleep are huge. Our bodies grow and repair themselves while we sleep. Our brains, immune system, and muscles all repair; and our bodies produce Human Growth Hormone which aids in cellular regeneration. Think of those sore muscles after the WOD you did...sleepy time is repair time for them. Mark Sisson, the Grokfather, has a really great post about sleep, that I highly recommend you read: http://www.marksdailyapple.com/the-definitive-guide-to-sleep/
